Hearty Sausage Casserole
When the evenings draw in, nothing beats a bubbling pot of sausage casserole blending rich tomato sauce, tender vegetables, and meaty sausages soaking up all that goodness – it’s one of our go-to comfort dishes.
Ingredients (Serves 4–6):
- 8 Downland sausages (pork, beef, or a mix — chicken and turkey work great too!)
- 1 tbsp olive oil
- 1 large onion, sliced
- 2 garlic cloves, crushed
- 2 carrots, chopped
- 1 red pepper, diced
- 1 tin chopped tomatoes (400g)
- 1 tbsp tomato purée
- 300ml chicken or beef stock
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1 tin cannellini or butter beans, drained
- Salt and pepper to taste
Method:
- Brown the sausages in a large casserole dish or heavy pan with a little oil until golden all over. Remove and set aside.
- Sauté the onions, garlic, carrots, and pepper until softened — about 5 minutes.
- Add the tomato purée, paprika, thyme, and chopped tomatoes, stirring to combine.
- Pour in the stock, bring to a gentle simmer, and return the sausages to the pan.
- Simmer gently for 25–30 minutes, or bake in the oven at 180°C for about the same time, until the sauce thickens.
- Stir in the beans, season to taste, and simmer for a final 5 minutes.
Serve piping hot with crusty bread, mash, or rice — and maybe a glass of red wine if you’re feeling indulgent.
