We work with some of the UK’s very best charcuterie producers. Our charcuterie suppliers use only prime cuts of meat, responsibly reared, by selected local producers.

The selected meat is prepared and then slowly air dried, or it may be mixed with freshly ground herbs and spices and carefully hand crafted into natural casings, which are then hung and also left to slowly air dry.

Air drying takes place under specially designed, modern, hygienic conditions. In this way, we can guarantee both food safety and consistent product excellence.

Correctly air-dried meat products have a long shelf life and, like a good wine or whisky, improve with time.

Prosciutto a flavourful, delicately sweet and salty product and each slice is streaked with fat. Some prosciutto varieties are seasoned with spices and herbs like black pepper, garlic, juniper, and rosemary, to pack in a more distinct fragrant flavour.

Pastrami is a cured deli meat made from the beef brisket or silverside. We make our own spice blend for seasoning which includes garlic, coriander, black pepper, paprika, cloves, allspice, and pimento seed.

Pancetta (pronounced pan-chet-ta) is a cured pork belly product, presented in slices that include lean parts and fatty parts. Our pancetta is stretched out, trimmed, salted and allowed to cure for 20 days before being sliced very thinly.

Salami Milano – also referred to as Salame, is a cured pork meat that has been seasoned with garlic, wine, black pepper, cured, air dried and allowed to ferment to give it its distinct persistent and nutty taste. It is fine-grained, tender and full of flavour.

Please note: to comply with legislation on food safety standards, nitrites and nitrates are used in the production of our charcuterie products and, by law, we are obliged to state that in our labelling. However, due to the nature of the production process – and the in particular the length of time these products take to mature – the actual levels of nitrates & nitrites remaining when ready to eat, is miniscule.
